WHOLEMEAL CARAMEL BANANA BREAD
½ cup honey or maple syrup
1/3 cup melted coconut oil
¼ cup Caramel Sea Salt Lovebean (softened)
1 cup mashed bananas
1 teaspoon vanilla extract
½ teaspoon cinnamon
½ teaspoon salt
1 ¾ cups whole wheat flour
1 teaspoon baking soda dissolved into ¼ cup hot water
If you love banana bread but are trying to stay away from white flour and refined sugars, then this recipe is for you. This wholesome banana loaf stays moist for days and is great alongside soup or as a healthy afternoon snack.
Before you start, preheat the oven to 325F and grease or line a bread loaf pan (5 x 8 or 5 x 9 will work). In a large bowl, stir together the melted coconut oil and the maple syrup or honey. Add eggs, Lovebean and mashed bananas and stir well.
Add vanilla, salt, cinnamon and flour, then stir until batter is mixed. Pour in the dissolved baking soda mixture, and stir until combined. Pour the batter into the prepared loaf tin and place in the oven for around 55 minutes, checking with a toothpick that it is cooked in the middle before removing from oven. When the toothpick comes out clean, remove from oven and place on a cooling rack for 30 minutes before slicing.
Delicious on its own or with your favorite toppings.
