Lovebean Caramel Baked Coconut Shrimp Recipe

Items needed:

  • 3 bowls
  • cookie sheet
  • cooking rack

INGREDIENTS: 

Coconut Shrimp Batter

  • 1 cup unsweetened shredded coconut 
  • 1/3 cup Panko or bread crumbs
  • 1 tbsp. Lovebean Sea Salt Caramel melted
  • 1lb raw Shrimp
  • 2 eggs
  • Salt and pepper

Caramel Apricot Dipping Sauce

DIRECTIONS:

1. Heat oven to 400º. In a bowl, mix 2 eggs and 1 Tbsp melted Lovebean Sea Salt Caramel 

2. In a second bowl, mix shredded coconut and bread crumps. Salt and pepper shrimp to taste (optional). Dip shrimp one by one in egg bowl and then dip in coconut mix and cover thoroughly. Set shrimp on rack over a cookie sheet or pan.

3. Cook in oven for 15 minutes

4. While shrimp are cooking. Mix Apricot preserves, 1/4 cup Lovebean Caramel, rice vinegar, and crushed red pepper. Place in serving dish for dipping.

*for melted caramel put a jar of room temperature Lovebean in a bowl of hot tap water for about 15 seconds and stir.
